Decadent Dining at La Posada


       (Palm Beach Gardens, FL) – December 3, 2015 – Does your New Year’s resolution include spending more time enjoying five-Star dining experiences in 2016? Thanks to newly appointed Director of Dining Services Sean McDonald and new Executive Chef Richard Cervantes, members of the Palm Beach Gardens, FL Kisco Senior Living community La Posada are beginning to see this resolution come to life before a new year begins.

Both highly trained chefs, who have had the opportunity to not only cook for internationally known royalty but also for well-known names like George Bush and Tom Brokaw, are now bringing their expertise to the residents of La Posada.

“When I came to La Posada I was very impressed with the country club feel of dining,” said McDonald, who began his culinary career in London. “Although there was a high class atmosphere in place, my goal was to create new and exceptional menu items along with the type of five-star dining experience that can be found at some of the most famous restaurants in the world.”

That is exactly why McDonald is now pulling out all the stops to accomplish the goal that was set after finding his way to this incomparable senior living community. “Today and far into the future, our community members are and will be treated to a daily changing menu, which often includes dishes like local fresh fish, braised short ribs and roasted lamb chops along with both elaborate salads like the Asian seafood salad, which pairs shrimp, mussels and calamari with sesame seaweed, as well as simple salads like a classic wedge,” said McDonald. “We have even asked members of this community to tell us about their most memorable or favorite dishes to incorporate with their favorite dining moments.”

“We even work with Swank Specialty Produce, in Loxahatchee, FL, who has begun providing  fresh produce and assists us in the planning of our ‘fresh-to-you’ menu by supplying a list of what is available on a regular basis,” said Cervantes.

In keeping  with Kisco Senior Living’s ‘Art of Living Well’ goal to include a seamless integration ensuring that all residents are empowered with choice, variety, autonomy and consistency through local, thoughtfully selected produce, grains, fruits and proteins, these experienced chefs are even taking this one step further – especially during the holiday season.

“Now that I have been given the opportunity to hand over the reins in preparing meals to Chef Cervantes, my goal is to reintroduce the full, fun and fancy dining experience in 2016,” said McDonald. “This includes creating more events like our upcoming Hanukkah celebration, which includes a bar setup with high class menu items such as lox and caviar, as well as our New Year’s toast with a brass band, caviar and champagne toast.”
